I noticed in the demo that when new large storage is created the screen does not refresh or progress bar is shown. I would like to be able to display a progress bar or similar when creating a new storage, is this possible?

1) what edition are you talking about?
2) What do you mean by "large storage is created"? Are you talking about a fixed-size storage file or about opening an existing storage or ... ?

1) The Standard edition.
2) Create as in a 'New Storage File' I am not talking about an existing storage file.

If I create a New, Fixed storage file and make that 250 megabytes in size and then click the 'Finish' button there is a delay in refreshing the screen while SolFs is working to create the new file - is there a way to apply a progress bar to this process?

Probably it's a sample's bug because FormatFixedSize() method reports a progress.

There's one exception though - when SetFilePointer() WinAPI function is called, it will not report progress and setting the file size to a large value takes time.
