In our application we are using the entire drive to store .st file stores. Currently when creating files using SolFS Explorer what ever we set the fixed size to be over 32GB the file is only created at 32GB. Can this size be easily extened or do we create multiple storages on the same drive?

It's a limitation of SolFS Explorer. We will fix it in the next build of SolFS.
To create big storage you can manually call FormatFixedSize method.
